Why does it happen?
It is happening when your laptop has connected external monitor, enters sleep mode for a while. I don’t know how much for a while because it is happening when I am sleeping and no one measured yet. It is not happening after 1–2 hours (at least in my case). Your MBP 16" restarts itself and when I woke up, I see login screen and dialog to send error to Apple. Of course, all my windows are gone and tries to re-open.
There is not any official explanation for this problem but for me, it is happening because:
Your mac cannot handle power of CPU and GPU
When you connect external monitor to your MBP, your external GPU begins to trigger. You will begin to hear more fan noise — I really don’t get why Apple cannot manage these types of things because if there is no external GPU, there is no problem with this kernel panic and external monitors.
